I would like to rent out a bare bones cabin (no electricity, etc.) for a few days in North Carolina (western / mountains)
Does anyone know of good places for these?

Try listings in the Pisgah Forest, there are a lot of free campsites within the area-but you have to bring yout tent-thus, you would not have electrivity, that may be your best bet.
